What You’ll Need
2 Tbsp of Apple Cider Vinegar (ACV)
2 Tbsp Coconut sugar
3 Tbsp of Coconut oil
2 Tsp of Cinnamon
1/2 of a Lime
1/2 Tsp of Black Pepper
1-2 Bunches of Beets
1-3 Bunches of Kohlrabi
1 -2 Bunches of Carrots
2-4 Bundles of Baby Bok Choy
Choose any combination of veggies!
How to Make
Preheat the oven to 475°
Cut off leaves and wash all veggies well with chemical free dishwashing detergent. Making sure to rub and rinse everything vigorously.
Cut, dice, or slice veggies however your heart
leads you to and mix together in a bowl if they aren't already.
Melt the coconut oil via stove or microwave
Mix in ACV, coconut sugar, cinnamon, lime juice, and black pepper.
Throw 3/4 of the coconut oil mixture into the veggie bowl and mix or shake them if you have lid to your bowl.
Place the veggies on a cooking tray (feel free to
line it with parchment paper), and bake for 30-45 mins the remainder of the coconut oil mixture over the veggies.
